Do you know the difference between taste and flavour?

Your palate knows more than you think.

Pinch your nose and bite into an apple. Now try a banana. Can you tell them apart? Probably not. Your tongue only knows five tastes. Flavour is everything else: smell, texture, temperature, memory. This course shows you how it all works, from ancient philosophy to modern science. Then you taste for yourself, with honey, lemon, dark chocolate and soy sauce, and start noticing what you’ve been missing.

Course Coordinator

Instructor Ella Cusano

Ella Cusano is an alumna of the University of Gastronomic Sciences of Pollenzo and the writer behind Sapori Stori, a Substack on food and flavour. In Mature Your Taste, she guides learners through every step of the course, from the basics of taste and flavour to the hands-on tastings. Her approach is simple: slow down, pay attention to each bite and write it down, because a curious palate is one that keeps learning.

Take your interest in food further

The University of Gastronomic Sciences of Pollenzo studies food in all its dimensions: science, culture, history, production, sustainability and communication. If the topics in this course interest you, you can explore them in depth in one of our bachelor’s, master’s or doctoral programmes, taught on campus in Pollenzo, in the heart of Piedmont.
